Potato Perfection
Murphy's Law and a cure for the common cold continue to defy science but
the perfect mashed potato is within reach. The secret? The amount of added
milk and butter. For each two pounds of spuds, use one cup of milk or cream
and four tablespoons of butter. Add another two tablespoons of butter for
richer potatoes. |

Pork Cooking
Most Americans overcook pork, but it doesn't have to be overcooked to be
safe. Pork is leaner now and since there is less fat, overcooking will
cause dryness. When cooked correctly, pork is done to juicy, tender perfection
with a little pink in the center. The recommended temperature for doneness is
160°F. - at this temperature, pork retains its natural juices (they will run
clear when pierced with a fork) that give it a distinctive flavor, texture and
tenderness. |

Bagging the Bird?
A turkey placed in a heat-resistant nylon Reynolds Oven Bag requires no basting
or tending. Simply bag the bird along with your favorite vegetables, sauce or
spices. Place it in a baking pan and pop it in the oven. The bag steams the
turkey rather than roasting it. It won't brown as much as a roasted turkey
but it will come out moist and tender, as it should if you roast it and don't
overcook it. |
